This Red Bourbon variety undergoes an extended carbonic maceration stage, a type of anaerobic fermentation. Then, adding in mosto (juice from compressed coffee cherries), wine yeast, and fruits like raspberry and mora (a local blackberry), the coffee is then fermented for another 72 hours.
